Shops all cleaned, damn that was a lot of work.
Rain or shine I am doing western style ribs both beef and pork
and I made Tube 'o Cholesterol , 7 kinds of pork rolled in a bacon
weave. It is truly evil. Just think heart attack on a plate

Been meaning to try one of those "PORKASMORDS" aka Tube 'o Cholesterol for the smoker...I may show up just to check it out!!! Did a trial in the oven a week or so ago but did only 4 or 5 porks..loin,sausage, ham, bacon, smoked...I need improvement on the the weave..on my production speed anyways....wife was like WTF are you doing???? "Trying to build a bacon blanket"....I actually threw a thin layer of stuffing in there somewhere just to absorb some of the juices from the pork and keep the moisture and flavor from escaping. What did escape I reduced and made a gravy to put over the slices.

The monsoon + migraine kept me at the house...hate I missed it.

35 plus cars even with the rain, unlike most shows we have over 3K sqft
in the shop, so we had a shop full of peeps
